Roasted Leg of Lamb with Tart Cherry Apple Rosemary Glaze

Ingredients:

  • Terrapin Ridge Farms Tart Cherry Apple Rosemary Glaze

  • One 5 to 5 1/2 pound semi-boneless leg of lamb

  • 1 3/4 pounds Cipollini onions, peeled

  • Salt and freshly ground pepper

  • 3 large carrots, sliced


Here’s how to do it:

  1. Preheat the oven to 450 degrees

  2. Season the lamb with salt and pepper then put in a medium roasting pan.

  3. Scatter the onions and carrots around the meat and roast for 15 minutes.

  4. Reduce the oven temperature to 325 degree and roast the lamb until an instant-read thermometer inserted in the thickest part of the meat registers 120 degrees, about 1 1/2 hours.

  5. Leave the oven on.

  6. Using a pastry brush or spoon, spread Tart Cherry Apple Rosemary Glaze all over meat and roast for 10 minutes longer or until an instant-read thermometer inserted in the thickest part of the meat registers 130 degrees.

  7. Transfer the lamb to a cutting board and let rest for 20 minutes.

  8. Transfer the vegetables to a bowl and keep warm.
